Monitoring email traffic

Hi all,

I'd like to have an email monitoring system and wondered if it was doable and how ( without buying a software)
Basically I'd like to be able to capture the recipient address for each mail sent from my computer (web based or outlook)
How hard is it? with which language?

Most email clients have an ability to automatically save the addresses email is sent to. Have a look through your configuration settings.
