do you prefer high level or low level?
 
and, who do you think deserves the most credit? The guy writing protocols, or the analyst who designs how it should work using uml?

The person who does both. It's very much possible to program at a high level with the right tools and languages.

High level (to me) tasks are still considered programming; its just that you're concerned with a significantly less amount of detail. You ever seen that movie Minority Report? Remember how he was operating the police stations computer? That reminded me of uml; all visual, all concept.
